해물파전; Haemul Pajeon; Seafood scallion pancake


A seafood variant of Pajeon, (해물;Haemul) is the Korean word for seafood. Usually a side dish or an appetizer, Pajeon literally means green onion (파;Pa) pancake (저;Jeon). Various seafood such as squid, clams, oysters and shrimps are added. As the name suggests, it is made from a batter of green onions, flour and eggs and then pan-fried with oil. Many Koreans like to enjoy Pajeon with a Korean alcoholic beverage (막걸리; Makgeolli)

One of the Korean favorites  This soup is made with beef short ribs simmered for 4 - 5 hours with daikon, the soft ribs are then seasoned with scallions, soy sauce Ganjang (간장), garlic, pepper, sesame oil and salt. The fatty oil is removed and the soup is simmered again before serving.

This is one of the most common stews found in Korea. Usually spicy, well-fermented Kimchi is the primary ingredient of this stew. It is often cooked with Tofu, onions, garlic, scallions and hot pepper paste. A dash of sugar and salt are also added to balance the taste. In some Kimchi stews, pork or seafood can also be found.

김밥; Kimbap; Seaweed rice rolls



A popular and common snack made from steamed rice, Bap (밥), wrapped and rolled in seaweed sheets, Kim (김). The rice is lightly seasoned with sesame oil and salt. Ingredients that are commonly rolled in the center are cucumber, carrots, pickled radish Danmuji (단무지), imitation crab meat, eggs, fishcake and tuna salad. Many variations of the Kimbap exists today.

비빔밥; Bibimbap; Mixed rice

A popular cuisine, this is a steamed rice dish that is commonly served with spinach, mushrooms, beansprouts, seaweed, bellflower roots (Doraji; 도라지), daikon, cucumber and egg. Different kinds of meat could also be found in different variations of Bibimbap. Chili pepper paste (Gochujang; 고추장) is usually added. Mix well before eating.

갈비찜; Galbijjim; Braised beef short ribs


Typically eaten during traditional festivals such as Chuseok (추석) and Seollal (설날), this cuisine is made of beef short ribs. Soy sauce Ganjang (간장), sesame oil, scallions, garlic, pepper, rice wine, sesame oil, ginger, honey and sugar are used to braise the meat on a mid-flame. 닭갈비; Dakgalbi; Stir-fried spicy chicken


Diced chicken marinated in spicy chili pepper paste (Gochujang; 고추장) is stir-fried with cabbage, green onions, sweet potato, onions, scallions and cylinder shaped Korean rice cakes (Tteok; 떡)  in a large cast iron pan at the table. Steamed rice (밥,Bap) is later then added and stir-fried with the remaining sauce in the pan. While the chicken can be eaten on its own, some people prefer to wrap it up with the leafy greens.

삼계탕; Samgyetang; Ginseng Chicken Soup


Traditionally served during summer to replenish lost nutrients caused by excessive physical demands during the hottest season, this soup is believed to help prevent physical ailments.

A whole young chicken is stuffed with sweet glutinous rice. Usually, it is then boiled with ginseng roots, garlic, jujubes, ginger and onions. Sometimes, medicinal herbs would be added. Depending on the restaurant, complimentary Ginseng wine Insamju (인삼주) would be served. The flesh of a well-cooked chicken can be easily teared apart and is usually dipped in salt and pepper
