삼계탕; Samgyetang; Ginseng Chicken Soup


Traditionally served during summer to replenish lost nutrients caused by excessive physical demands during the hottest season, this soup is believed to help prevent physical ailments.

A whole young chicken is stuffed with sweet glutinous rice. Usually, it is then boiled with ginseng roots, garlic, jujubes, ginger and onions. Sometimes, medicinal herbs would be added. Depending on the restaurant, complimentary Ginseng wine Insamju (인삼주) would be served. The flesh of a well-cooked chicken can be easily teared apart and is usually dipped in salt and pepper
